Avocado Caprese Skillet Chicken

Golden seared chicken, melty mozzarella, juicy tomatoes, creamy avocado, and a bright drizzle of The Olive Leaf Traditional Balsamic—this skillet dinner takes the classic caprese and turns it into a fast, satisfying main. Using The Olive Leaf Basil Olive Oil layers in fresh herb flavor without extra chopping, and everything cooks in one pan.

Ingredients

  • 2 chicken breasts, butterflied and halved (4 thin cutlets)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • Kosher salt & freshly ground black pepper
  • 2 Tbsp The Olive Leaf Basil Olive Oil
  • 6 oz fresh mozzarella, cut into 8 slices
  • 4 avocado slices
  • 2 medium vine-ripened tomatoes, sliced
  • 3 Tbsp The Olive Leaf Traditional Balsamic
  • 1/3 cup fresh basil ribbons

Directions

  1. Season the chicken. In a small bowl, mix garlic powder, onion powder, Italian seasoning, 1/2 tsp salt, and 1/4 tsp pepper. Sprinkle evenly over both sides of each cutlet.
  2. Sear. Heat Basil Olive Oil in a 12-inch skillet over medium-high. Add chicken and cook until deeply golden, 4–6 minutes per side, or until the center reaches 160°F.
  3. Caprese stack. Top each cutlet with 2 mozzarella slices, 1 avocado slice, and 1–2 tomato slices. Cover the pan, reduce heat to low, and cook 1–2 minutes, until cheese melts and chicken reaches 165°F.
  4. Finish & serve. Drizzle with Traditional Balsamic, sprinkle with basil ribbons and a few grinds of pepper. Serve warm.

Tips & Swaps

  • Want extra gloss? Reduce the balsamic in a small pan for 2–3 minutes to make a quick glaze.
  • No Basil Olive Oil? Use Garlic, Tuscan Herb, or classic Extra Virgin.
  • Serve over arugula, buttered pasta, or toasted sourdough to catch the juices.
