Antipasto Skewers

If you want a zero-stress party appetizer that looks fancy on a platter and takes minutes to assemble, make these Antipasto Skewers. The secret is a quick soak of fresh mozzarella in The Olive Leaf Mild (Unflavored) Olive Oil with herbs and a little heat—every bite tastes like it came straight from an Italian market. Great for game day, holiday spreads, picnics, and “I need something now” moments.
Ingredients
Skewers
- 12 kalamata olives
- 12 small balls fresh mozzarella
- 12 slices thick-cut salami
- 12 pimento-stuffed green olives
- 6 jarred cherry peppers, halved
- 12 small pepperoncini
- 12 (7-inch) skewers
Mozzarella Marinade
- 3/4 cup The Olive Leaf Mild (Unflavored) Olive Oil
- 1 Tbsp red pepper flakes
- 1/2 tsp freshly ground black pepper
- 1/2 Tbsp dried oregano
- 1/2 Tbsp dried parsley
- 1 clove fresh garlic, finely diced
Instructions
- Marinate the mozzarella. Whisk marinade ingredients in a bowl. Add mozzarella balls and toss to coat. Cover and refrigerate at least 1 hour (up to 24 hours).
- Assemble. Thread one of each ingredient onto each skewer: kalamata olive, marinated mozzarella, salami slice (folded), green olive, cherry pepper half, and pepperoncini.
- Serve or store. Arrange on a platter. Spoon a little leftover marinade over the top. Serve immediately, or cover and refrigerate up to 1 day.
Tips & swaps
- Add variety: artichoke hearts, sun-dried tomatoes, roasted red peppers, or marinated mushrooms.
- Make it mild: reduce red pepper flakes or skip cherry peppers.
- Add a finish: drizzle with Traditional Balsamic or sprinkle with fresh basil before serving.
What to pair with
Warm focaccia, a simple greens salad, and a glass of crisp white wine. These also travel well for potlucks.
