Chicago Citrus Salad with Olive Leaf Lemon Vinaigrette. 

I first had this salad at a high end restaurant in Chicago. I fell in love with its flavors and went home determined to recreate it! Linda

This salad kit features grapefruit, oranges, and beets along with a Lemon Vinaigrette. While it might sound a little out of the ordinary, give it a try. The way the flavors blend together is phenomenal.

Greens in this salad are Tuscan Kale, Spinach, Collard Greens, and Swiss Chard. 

All instructions and ingredients included in your salad kit. Ingredients are packed separately so you can customize your salad to suit your taste. 

Available for pick up after 12:30 on Wednesday, December 4th. Should be picked up no later than Friday, December 6th. 

You will receive: A half pound of freshly picked, locally grown greens from Gen215 - a mix of Tuscan Kale, Swiss Chard, and Collard Greens - enough for 4 salads, spinach, and all the fixins to complete your salad plus a fresh Olive Leaf Lemon Vinaigrette for the dressing. 

We have partnered with Gen215 to offer fresh salad kits and help get the word out about their greens program, which helps fund The Warehouse. 

About the greens:

These greens are grown locally in the Gen215 greenhouse, using a Commercial Regenerative Agriculture system. The greens are grown in water and fertilized by fish. They are twice as nutrient dense as traditionally grown greens and use 90% less water than traditional growing methods. 

All proceeds from the sale of the greens help to fund The Warehouse community programs. The Warehouse is a publicly funded non-profit here in Bloomington, Indiana, providing a safe place for sports, recreation, and the arts. The Warehouse offers an indoor skate park, rock climbing, weightlifting volleyball, basketball, indoor soccer, and parkour. The Warehouse also has a Tiny Tots area with indoor playground equipment, a coloring station, and videos and books. Admission is always free and open to the public.
